Ingredients
  

  • 3 cups Fresh Corn (or Frozen Corn) cooked
  • ½ cup Mayonnaise
  • ½ cup Mexican Crema (or Sour Cream)
  • ½ cup Cotija Cheese crumbled
  • 1 tsp Chili Powder
  • 2 tbsp Lime Juice
  • ¼ cup Fresh Cilantro chopped
  • To taste Salt & Pepper

Instructions
 

  • In a skillet over medium heat, roast the corn until lightly charred (if using fresh corn), or simply thaw and drain frozen corn.
  • In a mixing bowl, combine the roasted corn, mayonnaise, Mexican crema (or sour cream), and cotija cheese. Stir until well combined.
  • Add chili powder, lime juice, and chopped cilantro to the mixture. Season with salt and pepper to taste.
  • Mix everything together until evenly coated. Serve with tortilla chips or as a side dish to your favorite Mexican meals. Enjoy!

Notes

This dip is best served fresh but can be refrigerated for up to a day. You can also add some jalapeños for an extra kick!
