Mayonnaise

Mexican Crema (or Sour Cream)

Instructions
In a skillet over medium heat, roast the corn until lightly charred (if using fresh corn), or simply thaw and drain frozen corn.
In a mixing bowl, combine the roasted corn, mayonnaise, Mexican crema (or sour cream), and cotija cheese. Stir until well combined.
Add chili powder, lime juice, and chopped cilantro to the mixture. Season with salt and pepper to taste.
Mix everything together until evenly coated. Serve with tortilla chips or as a side dish to your favorite Mexican meals. Enjoy!
Notes
This dip is best served fresh but can be refrigerated for up to a day. You can also add some jalapeños for an extra kick!
