Ingredients
  

Dry Ingredients

  • 1 cup all-purpose flour
  • 2 tbsp sugar
  • 1 tsp baking powder
  • 1/4 tsp salt

Wet Ingredients

  • 1 cup milk
  • 1 large egg
  • 2 tbsp melted butter

Instructions
 

  • In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  • In another bowl, whisk together the milk, egg, and melted butter.
  • Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix.
  • Heat a non-stick skillet over medium heat and lightly grease with butter.
  • Using a tablespoon or mini ladle, pour small amounts of batter onto the skillet to form mini pancakes. Cook for 1-2 minutes, until bubbles form on the surface, then flip and cook for another 1-2 minutes.
  • Serve your mini pancakes hot with syrup, fresh fruit, or your favorite toppings.

Notes

Feel free to add chocolate chips, berries, or other mix-ins to the pancake batter for added flavor!
